The saturated adiabatic lapse rate refers to the temperature change in a parcel of saturated air as it rises (or the pressure is reduced). The reduction in pressure allows the air to expand, and therefore cool. Because the air is saturated, latent heat is released, offsetting some of the cooling effect.
